Recipe: Whole Grain Banana Bread (King Arthur Test Kitchen)
This is our “house” banana bread. It gets made A LOT. In fact, my daughter probably can make this banana bread now without looking at the recipe. This has kinda become her recipe. When those bananas start turning brown on the counter, one look her way and she is ready with a mixing bowl. It is easy and quick to pull together, a huge asset in addition to its tastiness!
This is a good recipe for a "healthier" banana bread. My modifications:
I always use all whole wheat flour (so not half whole wheat flour and half all-purpose flour). I really don't think you can tell the difference, and you get an extra fiber boost!
I use less sugar and omit the sugar topping.
At the bottom of the recipe there are suggestions for other modifications and substitutions that are really handy.
Occasionally when my daughter makes it, she sneaks in some chocolate chips...
It’s easy to make muffins with this recipe. It also freezes well.
